Our team of chefs think they know everything about great ingredients, but we couldn’t believe how many varieties of mango there are! In the end, after months of tasting different mangoes (genuinely!), we reverted to an old favourite – the Alphonso mango. Usually found in India, ours actually come from East Africa, and are quite simply the sweetest, most flavoursome mangoes out there!
